WI Shortcuts - Vathal Kozhambu Podi
Ingredients (Organic Ingredients)
Toor Dal (Red Gram), Dried Red Chill, Black Peppercorn, Channa Dal (Spit Chickpea), Fenugreek Seeds, Coriander Seeds No Added Artificial Flavours, Colours, or Preservatives.
After opening the pack, immediately transfer the contents into a clean, dry airtight container. Keep it in a cool, dry place or a refrigerator. Since there are no preservatives, use them within 12 months of opening the pack.
Soak a small lemon-sized ball of tamarind in 2 cups of warm water for 10 mins. Extract the juice and set aside. Mix 2 tbsp of Vathal Kozhambu Podi, 3 tbsp of water, 1/4 tsp of turmeric powder, and 1 tsp of salt and make a paste. Keep it aside. Heat 4 tbsp of sesame oil and temper 1/2 tsp of mustard seeds, 1/4 tsp of fenugreek seeds, 1/4 tsp of asafoetida, and 1 sprig of curry leaves. Add 1/2 cup of small onion or vegetable of your choice and saute for a minute. Now add the tamarind juice to this and boil for 5 mins on high flame. Add the prepared mixture to this and boil for 10 mins on medium flame.
