Bamboo rice or Mulayari emerges from a dying bamboo shoot.
Rich in protein, medicinal, has high nutrient content and low GI. As rice it is added to other rices or used as flour generally. Chewy when cooked and takes long to cook & is preferred for making sweets.
Cooking Instructions - Pre-soak overnight and pressure cook with 1:4 water for 4 whistles on high and 4 on low fire.
