Chitteni is bright red indigenous rice from Kerala , sourced from a single farm in Thrissur district . Grown during the mundakan season - July to December , this is aged paddy, parboiled and freshly milled retaining 60% of the bran. Suitable for table rice, idlis, kanji, it is much favoured by farmers. Pre soak for 2-4 hours, pressure cook 1 cup with 3 cups of water, 3 whistles on high , reduce the flame and let it cook on low fire for another 10 minutes. Open only after 10-15 minutes to let it cook in the residual steam.
