Secondly, our Emmer Wheat Flour comes from a certified organic farm in Pune, Maharashtra. Lastly, we procure it from a small group of farmers in Belgaum, Karnataka, where a single farmer cultivates it. The rotis made from emner wheat flour tasted nice and of course, it's healthy as the wheat which we get in market is genetically modified, the flour purchased readymade is with preservatives so this though a bit costly, is a healthy option.

The ancient khapli wheat

I have a very sensitive system, prone to inflammation, and effecting gut health. Gluten can aggravate it on certain days, but after much experimentation realised that the solution was not in avoidance. Shifting from commercial available wheat flours to organic atta and finally to indigenous wheat varieites which has a more complex carbohydrate and nutrient structure with a low gluten content became a game changer. This is one of the first ancient wheat varieties I tried, and we use it to make rotis, dosas, breads, cakes, cookies etc. With slightly more hydration and kneading, the breads come out really good. When we make rotis, fewer feels fuller, so it helps in managing overall eating habits too. We also love the taste, texture and fragrance that is generally absent in commercially available wheat flour brands including organic atta. Been sourcing it from here since the past few years because we trust the source.
