Sorgum/Jowar
Grown by organic farmer groups in Pudukottai and various districts in Karnataka. Unpolished, with its natural off-white colour, this has a robust bold rice taste. Generally used as a rice replacement and can be used to make a variety of rice and khichdi.
Pre-soak overnight. Pressure cook with 1: 4 water 4 whistles on high and 5-6 on low fire.
