The rotis made out of it turned out to be better than the wheat we were using at home and since then it is our choice of wheat since last 1 year and more. It is a native variety of wheat, has low GI and tastes better than any modern hybrid varieties…

Ever since we made a switch to ancient and indigenous wheat and rice varieties, some of the health issues connected with inflammation, low gut health etc has disappeared over the years. Paigambari has been a dependable staple for rotis, dosas, cakes, cookies etc. Didn't have much success with making bread with it though.
