Illuppai Poo Samba (unpolished) is a brown-coloured with a greenish tinge, known for its curative properties. When cooked, the rice has a slight fragrance of the Mahua flowers after which it is named. A bowl of kanji made from Illuppai Poo Samba can be very nourishing and can boost your energy. This unpolished rice is available with 100% bran, is slighly sticky when cooked and is popularly used by people who want to control high BP and high cholestrol.
This time illupai poo samba has about 20% mix , this happened as this was cultivated post a red rice. So the paddy seeds that remained sprouted and joined the ilupai poo samba and this field admixture has resulted in red rice amidst the ilupai poo samba. This possibly happened

The Story
The rice is mainly grown in the Kaveri delta. According to traditional lure, Illuppai Poo Rice is called women’s rice. As part of prayer rituals every Tuesday, women make some preparation with this rice and have it. It is believed to give them strength.
Biobasics sources Illuppai Poo Samba from two farms, one in Thiruvarur, Tamil Nadu and the one in Palakkad, Kerala. Both farms are PGS-certified and supply us with unpolished as well as semi-polished Illuppai Poo Samba.

Storage
- Once the plastic package is opened, transfer the rice to an airtight container and store in a cool and dry place.
- To prevent bugs from contaminating the rice, add a few cloves, chilli or bay leaves to the rice.
- You can also refrigerate long-stored rice to retain its properties and keep it fresh.
Cook
Since the rice contains 100% bran, it takes a slightly longer time to cook.

Pressure cooker 1 cup rice : 2.5 water. Cook on high flame for up to three whistles.

Open vessel: 1 cup rice : 2-2.5 cups water. Add rice to boiling water and cook on slow flame until rice is cooked.
