Kullakar Rice is a traditional red rice variety from Tamil Nadu. This semi-polished, parboiled rice comes with 20-35-% bran and is ideal for making idli, dosa, adai, and kanji. It is a delicious flavour and known for its healthful properties. Complex carbohydrates in the rice help you feel full for longer and keep hunger pangs at bay. It is therefore good for weight control too.

The Story

Kullakar Rice is a short-duration crop grown during the Kar or summer season. Bio Basic sources this rice from a single farm near Chennai. The bran content may vary from batch to batch since the machines used to process the paddy are not electronically controlled.

Storage

  • Once the package is opened, store the rice in an airtight container in a cool and dry place.
  • You can also refrigerate long-stored rice to retain its properties and keep it fresh.

Cook

  • Wash and pre-soak the rice for about 2 hours before cooking.

 

  • Pressure cooker: 1 cup rice: 3 cups water.

  • Cook on high flame for up to 4 whistles.

  • Then lower the flame and cook for up to 2 whistles.

  • Wait for the cooker to cool before opening it.

 

  • Open vessel: 1 cup rice: 4 cups water.

    Using this variety as a companion rice for making idli along with white rice. Great results and many thanks to bio basics for introducing so many diverse varieties of rice.

    Red kullakar rice adds a lot of value to your diet. Being semi polished, it retains a lot of nutrients lost in the process of polishing. The naturally present dietary fiber provides more satiation and is excellent for diabetics.
    Can be used as table rice or also to make idlis and a variety of dosas.
