  • This wheat, with its origins in the Middle East, grows in India on the Deccan plateau. It is known as Khapli Gehu. 
  • It is a hulled wheat, which means it has an outer husk-like covering that has to be removed in a mill before the grain can be used. 
  • The scientific name of the wheat is Triticum dicoccum. It is the parent of the modern-day bread wheat.
  • Emmer wheat is also known in the Western world as Farro medio 
  • It is easily digestible due to simpler proteins than modern-day bread wheat, which has more complex proteins.
  • It is a high-satiation wheat and is also known for its keeping quality. Rotis made with Khapli/emmer will not go bad for a couple of days at least.
  • Emmer wheat has gluten. No wheat is gluten-free.


The story 

Bio Basics gets it's emmer from a single origin source in Satara in Maharastra and also from a farmer collective  North Karnataka . We also get it a from a family farm near Pune.

All three are long standing organic grain farmers and the next generation in these farms are now taking over organic farming. 

Each of these wheats behaves slightly differently when cooked. This is more evident while baking than while making rotis.


Health

 

Emmer wheat is known for its healthful properties and it's antiquity . Unchanged since 1000s of years the protein structure if this wheat is simpler than modern wheat varieties making it easily digestible and reducing the chances of allergies.

Emmer wheat can be tolerated by many who have minor intolerance to gluten. Such people could try this wheat under doctors or dieticians advice .

Emmer is known to be low GI ( glycemic index) and therefore good for blood sugar management. It also has high fibre .

Storage 

 

Store the wheat in a cool dry place and sun dry it before milling it. Add chillies or neem leaves to there wheat container to prevent infestation.

If you are keeping it longer than a month, please sun dry the wheat periodically. Mill it fresh and use it.


Cook


Emmer wheat flour can be used like regular wheat to make rotis. The colour of the rotis will be more dull brown and early in the season , just after harvest , the new wheat can be a little sticky .

This is during the months of May and June with fresh wheat. So while mixing the dough you might find it sticking and having a little difficulty rolling it out . But after the initial months the wheat ages beautifully and makes delicious rotis. It is great in the form of rava , Dalia and vermicelli.
