Indrayini Raw Rice is a scented variety of rice from North Karnataka. This long slender rice is an improved variety of rice, evolved from Ambemohar, which is a traditional sticky fragrant rice of Maharashtra and North Karnataka. This less sticky rice is popularly used for making biryanis, pulavs, and many traditional Maharashtrian preparations such as Masale Bhaat and Khichdis. Its soft texture makes it ideal for elders and children.
The Story
Most people associate fragrant rice with Basmati rice, unaware that we have a large cornucopia of fragrant rices in different rice-growing states in India. Bio Basics, through its initiative called ‘Beyond Basmati’ have taken the lead to promote fragrant rices such as Indrayini, Ambemohar and other fragrant rices from different parts of India.
Indrayini Raw Rice comes to us semi-polished. Once harvested, it is stored and aged. The rice is milled only after six months to a year. Ageing improves the cooking quality of the rice. The paddy is aged and comes to you freshly milled.

Storage
- Once the package is opened, store the rice in an airtight container in a cool and dry place.
- To prevent bugs from contaminating the rice, add a few cloves, chilli or bay leaves to the rice.
- You can also refrigerate long-stored rice to retain its properties and keep it fresh.
Cook

Soak the rice for about half an hour.

Use an open vessel to cook 1 cup rice : 2 cups water.
