Barnyard millet (Echinochloa species) is an ancient millet crop that grows in regions with warm and temperate climatic conditions. In the millet family, it is one of the commonly grown varieties. It is very similar to little millet in taste and feel. Barnyard millet is one food crop cultivated in India that is used as food and fodder. Barnyard is a preferred crop for people in semi-arid and arid climates. Barnyard millet is one of the fastest-growing millet, and it can produce a crop in less than six weeks. Barnyard Millet is a hardy crop that is low maintenance and drought-resistant. Barnyard millet was grown in ancient times without tilling or much effort and therefore in certain communities not counted amongst grains and was and still is consumed during fasting period (when grains are not allowed). Barnyard millet is small grained, sweet and nutty flavoured. Among the various millet varieties in use in India, barnyard millet has the lowest glycaemic index.
Barnyard millet is a hulled grain, which means that it has an outer covering like in paddy rice that must be removed to get the edible grain, which is called barnyard millet rice. The millet with bran intact is unpolished barnyard millet rice and if polished is called polished barnyard millet rice.

Fun fact: Residues of barnyard millet were found within the Egyptian pyramids proving the antiquity of use of the millet.



The Story



Bio Basics gets its barnyard millet from two certified organic farmer collectives in Tamil Nadu. One is in Harur, and the other is in Pudukkottai. We have also started sourcing from a women’s collective in Karnataka. The barnyard millet grown by the farmers in the collectives is cleaned, sun-dried and hulled in the milling facility of the collectives that process the organically grown grain without polishing it. This leaves the bran intact, making the organic barnyard Millet rice from Bio Basics is highly nutritious. Our barnyard millet rice has a natural dirty white colour with a black spot on the grain like an eye. This is what helps identify barnyard millet rice. Otherwise, it is very similar to little millet rice and barely distinguishable.

All our millets come freshly hulled every month, and it helps retain its freshness. All the Millets contain bran. If you store unpolished barnyard millet rice for too long, it can become rancid. ( This is why commercial barnyard millet is fully polished) You can take it as a replacement for rice along with all Indian curries or prepare different kinds of variety rices.

Storage


  • After opening the packet, transfer it into an airtight container. Store the organic
    barnyard millet rice in a cool and dry place.
  • The maximum shelf life of this millet is three months, once opened. Holding it for
    more will tend to get infested.
  • If not using it regularly, it’s better to refrigerate it. Avoid stocking, buy only two
    or three millets at a time, and use them regularly.

Cook


Wash the Millet and rinse and soak it for an hour maximum. Drain out the soaked
water and cook in fresh water.


To cook in an open vessel:

  • Take the required amount of barnyard millet rice and water in 1:2.5
    proportion for a fluffy texture.
  • To make it a little more cooked, add a little more water.
  • Cook on a medium flame and with the lid up.

  • Once it starts boiling, reduce the flame.
  • After 10 minutes or after the water is fully absorbed, turn off the gas.
  • Drain the excess water, if any.

To cook in a pressure cooker (Better not to use a pressure cooker):

  • Take the required amount of barnyard millet and water in 1:2 proportion.

  • Put on the flame and wait for the first whistle to come.
  • Reduce the flame after the first whistle.
  • After the second whistle, put the flame off. (You can skip this step also to
    restrict the tightness of millet)
  • Avoid opening the lid of the pressure cooker immediately, and wait a few
    minutes to rest the cooked grains.
  • Fluff the cooked millet with a fork to avoid lumpiness, it tends to get
    lumpy if overcooked.
  • Serve it warm for the best taste.

Recommendations: Table rice, pulav , cauliflower rice, curd rice, tamarind rice , add to
dosa/idli batter, porridge for babies after weaning.

Fast or no fast, unpolished barnyard millet from Bio Basics is an excellent addition to my meals. Very light, nutritious and helps me keeping my calorie intake at low.
