Jyoti Aval or Poha is made from Jyoti Red Rice from Kerala. Jyoti Aval is of medium thickness, has a pleasant nutty flavour and 100% bran content. You can make a variety of dishes with Jyoti Aval. It is a good replacement for oats and sugary cereals. You can make muesli by combining the aval with chopped almonds, figs and fresh fruit. You can also make a porridge by pouring hot milk over lightly rinsed avail and sweetening it with raw cane sugar or nattusakkarai. ‘Aval Nanachathu’ is a favourite Kerala sweet. The aval is given a quick rinse, combined with freshly grated coconut and cane sugar and topped with sliced bananas and served to children as a healthy evening snack.
Aval is also called poha, rice flakes, beaten rice, flattened rice or pressed rice in India.
The Story
Bio Basics sources Jyoti Red Rice Aval from the same organic farm in Palakkad, Kerala that supplies us with Jyoti Red Rice. The farm is PGS-certified. The aval is made directly from paddy, which is taken to a local mill where it is soaked, roasted, dehusked and beaten. No chemicals or additives are used in processing the aval.
